DKS 3011:2024, Nixtamalization of maize grains — Code of Practice

This Code of practice provides recommended good practices for the acquisition and storage of raw materials, nixtamalization process, packaging, and handling of finished products of nixtamalized maize intended for human consumption.This code applies to all players involved in nixtamalization of maize including but not limited to households, community, and commercial Food Business Operators (FBOs).
