The notified draft Resolution sets forth the health requirements to be met by establishments engaged in the slaughter of animals of ovine and caprine species and the cutting, storage, marketing, sale, transport, importation and exportation of the meat and edible meat products thereof. It covers the following: Purpose; Scope; Definitions; Sanitary standards; Sanitation standard operating procedures (SSOPs); Ante- and post-mortem inspection; Hazard analysis and Hazard Analysis and Critical Control Point (HACCP) plan; Storage of meat and edible meat products; Inspection, monitoring, control and penalties; Notification; and Period of validity and derogations.
