Notice of Modification to the List of Permitted Preservatives to Enable the Use of Leuconostoc carnosum 4010 as an Antimicrobial Preservative in Certain Vacuum-Packed Non-Shelf-Stable Meat and Poultry Products

Background
Health Canada evaluated a food additive submission requesting the use a live culture of the bacterium Leuconostoc carnosum 4010 as a food additive. The purpose for using the preparation is to limit or inhibit the growth of the foodborne pathogen Listeria monocytogenes in certain non-shelf-stable foods that are vacuum-packed and that require refrigeration.
Health Canada determined that the available scientific data support the safety and efficacy of Leuconostoc carnosum 4010 for the requested use in these foods.
Health Canada published a proposal (http://hc-sc.gc.ca/fn-an/consult/nop-avp-0016/index-eng.php) on 12 April 2016, which was open for public comment for 75 days, for which no new scientific information was submitted. Since the conclusion of the evaluation remains as described in the proposal, Health Canada has modified the List of Permitted Preservatives (http://hc-sc.gc.ca/fn-an/securit/addit/list/11-preserv-conserv-eng.php), effective 14 December 2016.
The purpose of this communication is to publically announce the Department's decision in this regard and to provide the appropriate contact information for any inquiries or for those wishing to submit any new scientific information relevant to the safety of these food additives.
